Rotisserie Roast

One of the nicest things about cooking a roast on the ‘Q is that once you get it setup & running, you can sit & relax and drink a glass of lemonade.

Ingredients You'll Need

  • 4-5 lb. Meridian Rotisserie Beef Roast
  • 3 cups white wine
  • 2 onions, sliced
  • 3/4 cup olive oil
  • 4 garlic cloves, minced
  • 2 tbsp. butter,
  • 1 tbsp. coarse salt
  • 1 tbsp. black pepper
  • 1 tsp. fresh rosemary
  • 1 tsp. celery seeds
  • 1 tsp. fresh thyme
  • 1 tsp. dried sage

Directions

  1. Combine wine, oil, garlic & herbs
  2. Place beef roast and onions in a large reusable bag
  3. Pour marinade mixture over top and seal
  4. Refrigerate marinated roast for 2 hours to overnight
  5. Preheat grill on high heat
  6. Place roast on rotisserie spit making sure to keep it balanced & securing tightly
  7. Place roast on grill and reduce heat or move coals away from roast after 15 minutes
  8. Continue cooking until done (around 1 hour 30 minutes)
  9. Meanwhile, pour 2 cups of wine garlic herb marinade into a sauce pan and bring to a boil
  10. Reduce heat to medium and simmer for 3-4 minutes, stirring often
  11. Remove from heat and add butter
  12. Baste roast with mixture every 30 minutes during cooking time
