Grilled Quesadilla

Ditch complicated dinner and stick to a simple, low maintenance dinner on the BBQ!

Ingredients You'll Need

  • 4 Meridian Free Run boneless, skinless chicken breasts
  • 1 tbsp. olive oil
  • Salt and pepper
  • 1 can chipotle chili in adobo sauce, drained and minced
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tbsp. lime juice
  • 1 tbsp. chopped fresh cilantro
  • 8 corn tortillas
  • 2 cups cheddar cheese, shredded
  • Salsa

Directions

  1. Brush chicken breasts with olive oil and sprinkle with salt and pepper
  2. Lay chicken on a grill over medium heat and cook for 4-5 minutes per side, until cooked through
  3. Slice cooked chicken breasts into 1/4 " thick slices
  4. In a small bowl, whisk together chipotle Chile, sour cream, mayonnaise, lime juice and cilantro
  5. Spread 1 tbsp. of chipotle sauce (made in above step), on each tortilla and top with 1/2 cup cheese and 1/4 of the chicken slices, then cover with another tortilla
  6. Repeat step 5 with remaining tortillas
  7. Place tortillas on the grill over medium heat and grill uncovered, turning once, until cheese is melted and both sides are golden
  8. Slice each quesadilla into wedges and top with salsa
