Grilled Corn on The Cob With Citrus & Paprika

We love simple & yummy food and this Mexican inspired sides is one of our favourites

Ingredients You'll Need

  • 4 ears of corn
  • 2 tbsp. virgin coconut oil
  • Smoked paprika, to taste
  • 1 lime, cut into wedges
  • fresh cilantro, chopped
  • Sea salt, to taste
  • Black pepper, to taste

Directions

  1. Heat grill over high until hot
  2. Pull back a few husks of each ear of corn
  3. Place corn directly on grill, cover, and cook for 15-20 minutes or until husks are charred on all sides, rotating occasionally
  4. Remove and allow to cool
  5. Remove husks and silk from each ear of corn
  6. Use a pastry brush to spread coconut oil over each ear of corn
  7. Place corn on a serving platter and sprinkle with smoked paprika
  8. Spritz with lime juice, sprinkle with cilantro, and season with salt and pepper
