Double Chocolate Banana Muffins

Ingredients You'll Need

  • 1/4 cup & 1 tsp. cocoa
  • 1 3/4 cup flour
  • 1/2 tsp. baking soda
  • 2 tsp. baking powder
  • 1/2 tsp. cream of tartar
  • 1/4 tsp. salt
  • 1/3 cup butter
  • 2 large eggs
  • 2/3 cup sugar
  • 1/2 tsp. vanilla
  • 2 medium bananas, mashed
  • 1 1/2 cup semi-sweet chocolate chips

Directions

  1. Preheat oven to 375 degrees
  2. Line a jumbo muffin tin with cupcake liners
  3. In a medium bowl, whisk the cocoa, flour, baking soda, baking powder, cream of tartar and salt
  4. In a large mixing bowl, beat the shortening, sugar, eggs, and vanilla until smooth
  5. Slowly add a little flour, banana and mix and continue to add flour and banana until all mixture is folded in and well mixed
  6. Add chocolate chips and mix well
  7. Spoon mixture into muffin tin (2/3 full)
  8. Bake for 25-30 minutes and allow to cool
