Honey Glazed Rack of Lamb

Ingredients You'll Need

  • 2 Meridian Frenched Rack of Lamb
  • 1/2 cup honey
  • 1/2 cup cherry jam or jelly
  • 1 tsp. fresh lime juice
  • 2 tsp. olive oil


  1. Place lamb racks on a foil-lined baking sheet
  2. Drape a piece of aluminum foil over the bones to prevent browning
  3. In a small bowl, combine honey, jam, oil and lime juice
  4. Set aside 1/2 of the honey glaze mixture
  5. Spoon half of the remaining mixture over the lamb
  6. Broil for 10-12 minutes or until lamb reaches an internal temperature of 160 degrees F
  7. Remove lamb from oven and loosely cover with foil
  8. Let stand for 5 minutes before cutting
  9. Brush with reserved glaze
