Lemon Strawberry Chia Seed Muffins

You can’t buy happiness but you can make these muffins which is pretty much the same thing

Ingredients You'll Need

  • 1/2 Cup coconut flour
  • 1 tsp. xanthan gum
  • 3/4 tsp. baking powder
  • 3/4 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tbsp. chia seeds
  • 1 tbsp. lemon zest
  • 1 tbsp. coconut oil
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1/4 cup Greek Yogurt
  • 1/4 cup agave
  • 3 tbsp. lemon juice
  • 1/2 cup unsweetened vanilla almond milk
  • 1 cup frozen strawberries, thawed and diced


  1. Preheat oven to 350F
  2. Lightly coat 9 muffin cups with nonstick cooking spray
  3. Whisk together the coconut flour, xanthan gum, baking powder, baking soda, salt, chia seeds, and lemon zest in a medium bowl
  4. In another bowl, whisk together coconut oil, egg and vanilla
  5. Stir in Greek yogurt until no lumps remain
  6. Stir in agave, lemon juice, and almond milk
  7. Add in the coconut flour mixture, stirring until fully mixed
  8. Let batter rest for 10 minutes
  9. Gently fold in the diced strawberries
  10. Divide batter between the muffin cups
  11. Bake for 25-30 mins, or until a toothpick inserted into the center comes out clean
  12. Cool in pan for 10 minutes before carefully turning out onto a wire rack
