Terrific Thai Soup

Skip the takeout and make this dish. Rich, creamy and loaded with flavour. A classic thai dish.

Ingredients You'll Need

  • 1 cup basmati rice
  • 2 tbsp. unsalted butter
  • 2 lbs. Prawns
  • 2 garlic cloves, minced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 tbsp. ginger, freshly grated
  • 2 tbsp. red curry paste
  • 2 (12 oz) cans unsweetened coconut milk
  • 4 cups vegetable stock
  • Juice of 1 lime
  • 2 tbsp. fresh cilantro, chopped
  • Salt and pepper to taste

Directions

  1. Cook rice according to package directions in a saucepan or in a rice cooker
  2. Melt butter in a large stockpot or dutch oven over medium high heat
  3. Add prawns, pepper, onions, salt and pepper to taste
  4. Cook, stirring occasionally, until pink (about 2-3 min.), then remove from pan
  5. Stir in ginger until fragrant (about 1 min.)
  6. Whisk in curry paste until well combined
  7. Gradually whisk in coconut milk and vegetable stock, cook, whisking constantly, until well mixed
  8. Bring to a boil; reduce heat and simmer until slightly thickened (about 10 minutes)
  9. Stir in rice, shrimp, lime juice and cilantro

I just read the recipe and you missed the section on what to do with the onion and red pepper…also, why does the photo show a picture of tomatoes and chilii peppers when they are not in the ingredient list?

Thank you for your questions, I apologize for our error. You will add the onion and red pepper in the same step as adding the prawns. Thank you for making us aware of this, we have changed the directions. Tomatoes and chili peppers can be added to the recipe, along with any other vegetables you choose to add. With this soup you can add anything you like. Eggplant and mushrooms will also be delicious in this recipe. If you decide to make this, please let us know what you add 🙂

I made this recipe and it was incredibly delicious! I did add some mushrooms, when I sautéed the onions and peppers. Just a note, I would sauté the onions, peppers, garlic and any other vegetable you choose, for 3 minutes and then add the prawns, and cook for 2 to 3 minutes more. I will definitely make this again, possibly next week!
