Garlic & Rosemary Mashed Cauliflower

A delicious, light, low-carb stand in for your beloved mashed potatoes!

Ingredients You'll Need

  • 1 large cauliflower, chopped into small florets
  • 3 oz. low fat cream cheese
  • 2 tbsp. unsalted butter
  • 1 1/2 garlic, minced
  • 1 tbsp. fresh rosemary, chopped into pieces

Directions

  1. Bring a medium pot water to a boil
  2. Once boiling, cook the cauliflower for 8-10 minutes or until fork tender
  3. Remove cauliflower and drain
  4. Place cauliflower along with all other ingredients into a blender or food processor and pulse until smooth & creamy
