Mediterranean Style BBQ Lamb

Here is a BBQ lamb recipe with a hint of Mediterranean flavour

Ingredients You'll Need

  • 1 Meridian Free Range Rack of Lamb
  • 1 Lemon
  • 1 Lime
  • 1 Large Garlic Clove
  • 1/2 Tsp. Cumin Seeds
  • 1/2 Tsp. Coriander Seeds
  • 1/2 Tsp. Sea Salt
  • 1/2 Tsp. Pepper Corns

Directions

  1. Use a mortar and pestle to grind the cumin, coriander and salt & pepper
  2. Juice and zest half of the lemon and half of lime and pour into mortar, stir these ingredients until thoroughly mixed
  3. Rub this marinade on the lamb rack and place in a bowl or container & cover with paper towel
  4. Leave the marinated lamb in the fridge for a minimum of two hours, and then bring to room temperature before cooking
  5. Start up your BBQ and put on high heat. Drizzle olive oil over the lamb and then place the lamb on the grill
  6. For a medium rare cook, cook the rack on each side for 7 minutes
  7. After this is done, turn the lamb over one final time to cook for another 5 minutes
  8. Let the lamb rest for 3-5 minutes before carving
