Herb Roasted Potatoes

Ingredients You'll Need

  • 2 Pounds Potatoes
  • 2 Tbsp. Olive Oil
  • 1 Tbsp. Parsley, chopped
  • 1 Garlic Clove, minced
  • 1 Tbsp. Rosemary, chopped
  • Salt & Pepper, to taste

Directions

  1. Preheat oven to 425 Degrees F
  2. Scrub potatoes and slice into cubes about 1" thick
  3. Toss potatoes in olive oil, garlic and seasonings
  4. Place potatoes on a parchment paper lined baking sheet
  5. Bake for 30-35 minutes, until browned & tender
  6. *Optional: Serve with sour cream & bacon

Wondering why there are two different amounts of parsley in the recipe?

Hi Ginny,

Great question! That was a typo, it should only be the 1 Tbsp of parsley. I have removed the 1 Tsp line. Thanks for asking!
