Fully Loaded Potato Skins

A game day favourite that is hard to resist

Ingredients You'll Need

  • 6 Russet Potatoes, cleaned and dried
  • 8 Ounces Cheddar Cheese, Shredded
  • 8 Slices Meridian Double Smoked Bacon, cooked & crumbled
  • 1/4 Cup Unsalted Butter, melted
  • Green Onion, Chopped
  • Sour Cream, for topping
  • Salt and Pepper, to taste

Directions

  1. Preheat oven to 400 degrees F
  2. Poke potatoes with a fork, place on baking sheet and cook for 1 hour
  3. Remove from baking sheet and allow to cool for 15 minutes
  4. Use a sharp knife to cut each potato lengthwise into three sections creating long slices
  5. Use a small spoon to scoop out 3/4 of the potatoes
  6. Turn your oven on broil
  7. Brush potatoes with butter on the inside and outside and place them back onto the baking sheet
  8. Season buttered potato skins with salt and pepper, place them in the oven and broil for 5-10 minutes, until insides are crispy
  9. Remove from the oven and add shredded cheese and bacon into each skin
  10. Place under the broiler and broil for 3-4 minutes or until cheese is melted
  11. Remove from oven and top with sour cream and green onions
