Double Smoked Bacon Omelet

Try this on Saturday morning and start your day off with a bang

Ingredients You'll Need

  • 8 Meridian Farm Fresh Eggs
  • 4 Slices Meridian Double Smoked Bacon, cooked & chopped
  • 1 Cup Milk
  • 1/3 Cup Flour
  • 1 Red Pepper, finely chopped
  • 3 Green Onions, finely chopped
  • 1 Tsp. Dried Oregano Leaves, crushed
  • 1 Cup Mixed Mozzarella Cheese, shredded

Directions

  1. Heat oven to 350 degrees F
  2. Line 15x10x1 – inch pan with parchment paper, with ends extending over the shortest sides of the pan
  3. Spray with cooking spray
  4. Beat eggs, milk and flour in a large bowl, and whisk until well blended
  5. Stir in bacon, red pepper, onions & dried oregano and pour into the prepared pan
  6. Bake 14 to 16 minutes or until edges are almost set
  7. Top with shredded cheese; bake 2 min. or until melted
  8. Serve with warm salsa (optional)

Your Directions don’t include when to combine the bacon. (Also sp. mistake ‘Serve’ in point 8)
