Cream Cheese Stuffed Chicken

Wrapped in delicious bacon… enough said

Ingredients You'll Need

  • 4 Meridian Free Run Boneless Skinless Chicken Breasts
  • 1 Tbsp. Meridian Italian Rub
  • 2 Tbsp. Cooking Oil
  • 4 Slices Meridian Double Smoked Bacon
  • 8 Ounces Cream Cheese, softened
  • 1/4 Cup Green Onions, chopped finely
  • Salt and Pepper, to taste

Directions

  1. Preheat oven to 375 degrees F (190C)
  2. Partially cook the slices of bacon in a frying pan (bacon will cook the remaining amount in the oven with the chicken)
  3. Cut the chicken breasts in half and then flatten the chicken by pounding them out to be about quarter of an inch thick
  4. Mix Italian Rub and Cooking oil, and rub on chicken breasts
  5. Mix the cream cheese, salt, pepper, and green onion together
  6. Spread 2 tablespoons of the cream cheese mixture onto each of the flattened chicken breasts.
  7. Roll up the chicken slices and wrap them each with one strip of bacon
  8. To keep the chicken wrapped tightly, secure with a toothpick
  9. Place a piece of parchment paper on a cookie sheet and then place the stuffed breasts on top
  10. Bake for 30 minutes and then broil the chicken breasts for 5 minutes for crispy bacon
