Blueberry Pie

Gluten Free and Vegan.

Ingredients You'll Need

  • 3/4 Cup Gluten Free All-Purpose Flour
  • 1/2 Cup Walnuts
  • 1/4 Tsp. Sea Salt
  • 1/2 Cup Coconut Oil
  • 1/2 Cup Gluten Free Oats
  • 5 Tbsp. Cold Water
  • 1/2 Cup Sweetner
  • 2 Tbsp. Cornstarch
  • 1 Cup Water
  • 1 Tbsp. Coconut Oil
  • 4 Cups Fresh Bluerries
  • Pinch of Sea Salt

Directions

  1. Preheat oven to 400F
  2. Add walnuts and flour to a food processor and process until finely mixed
  3. Add in salt and coconut oil and process until combined
  4. Place mixture into a large bowl and add 3 tbsp of water
  5. Combine mixture until it forms a dough, adding more water if necessary
  6. Press dough evenly into a 9 inch pie pan
  7. Refrigerate dough for at least 15 minutes
  8. Bake pie crust for 12 to 15 minutes or until edges are golden brown
  9. Combine the sweetener, cornstarch, water and sea salt
  10. Stir until cornstarch has dissolved
  11. In a saucepan, add blueberries, coconut oil and cornstarch mixture
  12. Heat over medium-low heat until the mixture has thickened and coats the back of a spoon
  13. Pour blueberries into prepared pie shell and refrigerate until completely cooked and filling is set

Your frozen fruit pies are delicious! I’ve tried rhubarb & cherries.
Second time was strawberry&rhubarb. The pastry is unique,bottom crust,well cooked. Good amount of tasty fruit,not too sweet. That’s a good thing! Pastry is more like your favourite shortbread/sugar cookie dough,not too sweet,not too rich. You could actually eat the whole pie and not feel guilty. I suggest that they go on sale more often as not everyone checks the frozen section. Great dessert!
The one with cherries is my Fav!!! No one wants too bake in the summer! Make our life easy!!!
